Hi, The cooking time is so long, for an hour at dg375, that the chicken should most definitely be cooked all the way through.
If you have any question, however, you could pierce the thickest part of the breast with a knife to determine how tender the meat is. The more tender the meat, the more thoroughly cooked it is.
