That's good to know.  However, I will add that the food expert says
that ice crystals rebuild when the meat is re-frozen, and during the
thawing stage, the ice crystals break down the fibers, or some such
thing, and that toghens the meat.  Yes, stores do it all the time, but
they can go to subzero temps with their freezers, whereas, most home
freezers cannot do that.

I'm not trying to change anyone's mind or anyone's way of doing
things.  I'm just explaining what I've heard on a food news program.
Since what you are doing works for you, by all means, stay with it.
