Where I work they always have a chili competition each year and I think 
they never run the competition correctly.  They charge for the chili and 
I think that's an awful idea.  If I were running the competition, the 
chili would be free, but the charges would come for the crackers milk 
and ice-cream.  With some especially hot entries with deceptively 
innocent non-threatening names, the competition could turn into an 
infernally successful fund raiser.  Almost certainly Hungarian Paprika 
and cracked black pepper were used in that sausage.  Ghost peppers and 
scotch bonnets ought to be a good contender especially if it's an all 
meat chili.  We had a wings chain here called Buffalo wings and Beer and 
they had insanely hot wings which nobody was supposed to be able to eat. 
 I managed to eat a whole pound and after biting into the first wing it 
was a mind altering experience.  I needed a few beers and cheeseburgers 
afterwards and about 8 hours to finally get the system back to normal 
too.  Those things make sweat come down behind your ears and down both 
sides of your nose and I've been told that's the sign of a good chili 
when found while eating chili.
