Well, adding anything to the cheese inside other than spices makes it a
Panini. I cook mine on my quesadilla cooker, and about two minutes on a hot
one will do a great job. I use the sharpest cheddar I can find, usually cut
thick from a block using a cheese wire. (I cut a slab off the side, so that
I have one contiguous slice of cheese that is about the size of the bread)
Then comes either butter or garlic olive oil on the outside. A good German
pickle, like a Gundelsheim, makes a great side for it.

I agree with the part about you having a bird brain.  Heh heh heh.  As for a
grilled cheese sandwich, 4 minutes on a George Foreman grill set on high
makes them perfect!  Come to think of it, put a couple of pieces of ham or
turkey on it, too.  Good! stuff!
