Dollywood Presents Tennessee Mountain Home Cooking:
Vegetables And Fruits
Party Sweet Potato Balls
1 large can sweet potatoes, drained (reserve liquid)
Marshmallows
Chopped pecans
Crushed pineapple tidbits, drained (reserve juice)
1 tablespoon cornstarch
1 cup brown sugar
1/2 teaspoon vanilla
Lump of butter
Dash of cinnamon
Salt to taste
Mash sweet potatoes. Roll into balls. Place a marshmallow inside each ball. 
 Place in baking dish. Sprinkle with chopped pecans and crushed pineapple. 
Mix  1/2 cup pineapple juice, 1/2 cup sweet potato liquid, cornstarch, brown 
sugar,  vanilla, butter, cinnamon and salt. Cook until thickened. Pour over 
sweet potato  balls. Place in oven just long enough for balls to pop open.
Note:
Can be fixed ahead and frozen.

Honey Ham
1 (5 pound) boneless, fully cooked ham
1/4 cup honey
1/2 cup packed brown sugar
Score ham. Wrap in foil, and bake at 325 degrees for 1 hour in a broiler  
pan. Combine honey and brown sugar, mixing well. Remove ham from oven. Pull 
foil  open and spread honey glaze over ham. Rewarp in foil and bake for 1 
hour longer.  Cool for 15 minutes before serving.

Hot Cabbage Slaw
4 cups coarsely shredded red or green cabbage
1 can (16 ounces) cut green beans, drained
1/4 cup sugar
1 tablespoon instant minced onion
1 teaspoon salt
1/2 cup vinegar
In large saucepan, heat all ingredients to boiling. Reduce heat; simmer  
uncovered, tossing occasionally, until cabbage is crisp tender, about 5  
minutes.
Makes 6 servings (65 calories each).
