In general, meat loaves are in a large loaf, so you don't tend to cook the meat beforehand. And though this one calls for two pounds of ground beef, traditional meat loaves tended to use a mix of ground meets -- beef, pork, and lamb were the common ones used, so you could go with a pound each of ground beef and ground pork, for example, or a pound of ground beef and a half pound each of pork and lamb. Just an option. And of course, too, you can use game meats like boar or venison, of course ground.
