It's also called a Grill Press. My family had one made of iron with that
name on it and a pig cast into the bottom of it.
They're great for cooking meat -- fire up a second burner and place the
press in a pan or on a griddle and get it nice and hot, then put it on top
of the meat in the other pan. It helps to preheat the other pan, too. I
don't recommend this for bacon or other small stuff you have to really mess
with to get into the pan right, but it's great for cooking steaks faster.
It's also one of the origin points for the George Foreman type grills --
heating from both sides.
They've been around a long time.

I explained it in a previous message. It's a piece of metal with holes in it
and a knob on top. You put the cold bacon in the pa and put the bacon
crisper on top of the bacon and turn the pan on and time the bacon for as
long as you need. You don't have to turn the bacon because the crisper
covers it.n

I lay out the strips of bacon in the biggest skillet I have, place the bacon
crisper on tope and cook on medium heat, for about 10-15 minutes.

Remember too that bacon is better when fried instead of cooked, so if
possible it's better to have a bit of oil or grease in the pan. A grill
press also helps in cooking bacon as it heats from the top and also helps to
keep it from shrinking as much. You can find them at cooking supply stores
and they may have them at department stores too.
