Hi, Nicole, So far, I have found two recipes for red beans and rice. One is in the New York Times Cook book, (Revised Edition) It is available from Learning Ally (formerly known as Recording for the Blind and Dyslexic). The other recipe is in The A Taste of Home cook book, available from the same source.
