As I posted before, making homemade pizzas with homemade dough is not really
that hard. The dough is pretty easy and doesn't take a lot of kneading. You
can do it  by hand or use a dough hook, wich cuts the time spent kneading to
about a minute. Pizza stones work great or just a pizza pan. You can roll
out the crust and then use them to shape the final product. For mini pizzas,
I roll out the dough to the desired thickness (about a half inch thick for
thin crust, thicker for thick crust) then use a large round cookie cutter to
cut out circles and place on baking stone or cookie sheet spaced about an
inch apart so they are not touching. Of course, as I said, you could use a
muffin pan and cut the dough to fit each slot if you like. I would probably
find a cookie cutter that size or use the bottom of a glass to cut around
with a sharp knife. You could also press into pan so it doesn't cover the
whole pan or baking stone and then cut into squares for rectangular cookie
sheet or triangles for round pans. Pull  apart so they do not touch and
place toppings on them. Remember to always bake toppings on top of crust
because pre-baking crust ruins it.

I like a thin crust pizza, so I use a flour tortilla to build onto. 
Pepperoni, loads of cheese, and spicy sausage with some pizza sauce.  Two of

them will fit onto a lightly greased cookie sheet, bake at 350 for 7 to 9 
minutes.  Top with another flour tortilla and pinch moistened edges to seal 
just to be different.
