The cinnamon will help control blood sugar. The research on it found cinnamon was very powerful doing this too. Even so consuming a carb with a protein sends the carb into the metabolic system and not the fat cells for storeage. Doing cinnamon and a protein with a carb works even better.

Oh no!  I didn't realize that oatmeal has carbs!  I have to be careful with 
those, too, now that I don't take the medication I was taking for a stomach 
issue.

I just don't like the taste of salt in my oat meal.

Hope you get a chance to try the walnuts and apples.  You know, you could also 
use others fruits--maybe some would be better with diabetic considerations.

Don?t know why I never thought of putting cut up apples & walnuts in oatmeal. I 
love that combination. Usually I add in a little bit of raisins and cinnamon to the 
oats. And, even the old-fashioned type oats, not the instant, I do in the microwave.

I?ve never added salt because I?m a diabetic I?m better off not adding any 
extra sodium.  For that matter, I have to watch the amount of raisins/apples 
because the oatmeal on its own has a good amount of carbs that I have to watch 
as well.

Thanks for the idea for apples and walnuts.

I used to hate oatmeal because it had salt and milk in it--esp. the salt.  I 
figured out one day that I like it with walnuts and apples--yum, yum!!  
Personal preference of course.

I've heard about the salt in coffee.  Also coffee in chili--only a little, but 
I've never tried either.

I never tried soaking steel cut oats and when I get raisins later this month 
I'll try that in the nuwave oven and see if it makes a different kind of 
oatmeal.  I haven't tried salt in oatmeal yet either.

One thing I heard I thought curious, Ethiopians put a little salt in coffee 
when they make it to remove bitterness.

I generally use quick oats, not instant. I use one half cup oatmeal to one cup 
water with a dash of salt.
I boil it in a sauce pan and when thick, pour it in to a bowl with a bit of 
milk and brown sugar.
I usually put a hand full of raisins in at the beginning so they will absorb 
water.
i have been doing it this way forever.
I love steel cut oats.I used to soak them overnight with raisins and then cook 
them about ten minutes or so in sauce pan.
