The onset of carb ice should be gradual, not sudden.

Don't expect a Stromberg mixture control to act like the one on a marvel.
Strombergs are somewhat self compensating (scientific term) and, given the
age and condition of most, either do nothing or do what you described.  As
to
your real problem, it's a good one.  I guess the first place I'd look is
an
intermittent fuel delivery problem.  Carb heat reduces the engine's need
for
fuel, and may carry it long enough to recover.  Look for possible
blockages
in the fuel system, vent system, and sticking float in the carb.  Good
