Like torque wrenches, you can get inexpensive ones that depend upon a springy rod or more expensive (but not outrageous) ones that have actual gauges. Anyhow, they come for various ranges of cable size and should be adequate for aircraft rigging. Considering sailors depend on them to keep the mast in the boat, which is kind of an important function. My boating experience tells me that without a tensionometer, most people tend to crank down wire rope way harder than it oughta be.
