So does Fedora, and all other rpm-based distributions. There's nothing about the non-interactive build process that requires rebuilding of all configure scripts and makefiles.

That's not fully trivial and it relies on clean build scripts.

So does rpm. On Fedora, or Cent-OS, rpmbuild -ta courier-<version>.tar.bz2 is going to build all packages noninteractively, without screwing around with the configure scripts and the makefiles.

to use an up-to-date courier on my machine. If there's something that really can be fixed on the gentoo-per-package-side, please tell me.

Get rid of all that jazz with rerunning autoconf and automake. This is not needed on any other distro, and should not be needed on Gentoo.
