There are certain large domains that you need to exempt from  
greylisting for one reason or another.  these domains are often in an  
exceptions list that comes with whatever package you use.  I use  
postgrey and it lists things like:

# greylisting.org: Southwest Airlines (unique sender, no retry)
southwest.com
# greylisting.org: Yahoo Groups servers (no retry)
scd.yahoo.com
# greylisting.org: isp.belgacom.be (wierd retry pattern)
isp.belgacom.be
# greylisting.org: Ameritrade (no retry)
ameritradeinfo.com
# greylisting.org: Amazon.com (unique sender with letters)
amazon.com

etc etc

I do not whitelist anything other than these with the exception of my  
admin email account.

I have no whitelist exceptions for Spam-Assassin at all.  Spammy mail  
that gets tagged needs to be learned.
