Surf servers etc are their own thing ofcourse but I'm talking about regular servers with default movement values

When a server raises sv_airaccelerate a lot, it starts to matter. sv_clockcorrection_msecs doesn't have an effect on actual physics like that. I have still gotten caught since the path on our surf DM server(just played a good 2 hours on it), but it isn't bad.
