The technique of using OOo is pretty easy though, anyone can do it. You can even create PDF forms that you can give out to people to fill in, then they can submit right off the form to a web site (thats where you have to parse the FDF, not what I had to do to pre-fill the forms.) Luckily, I started with MS Word documents. Import that into OOo. Save a copy as .odt (OpenDocument Text*). Then View->Toolbars->Form Controls. This brings up the Form Controls toolbar. Select Design Mode, then drag, say, a text box onto the form. Hold the mouse button down and drag it open to the size you want it to be. Rt-Click and change its properties and change its name from Textbox1 to whatever. Repeat as needed. Export to PDF and you are done!
