Well, they need cellulase to break down cellulose completely. I say juice
them because that is what I learned from Billinghurst...In "Give Your Dog A
Bone", he says to run the vegetables through the juicer and give them the
pulp and some or all of the juice. I'm pretty sure he suggests the juicer
because it grinds them up to such a fine, really fine, consistency.

Don't know about that...not sure.

Just about anything is ok to feed them in moderation...but you don't want to
give them too much of the nightshades (a little every once in a while is
ok...use your judgement) and you don't want to give them too many of the
cruceferous vegetables, like cabbage, broccoli, cauliflower, kale, etc.
because they may cause excess gas. A little of these is ok, just don't over
do it.

That sounds fine. BARFers do things in different ways...some give a veggie
meal a couple of times a week...some give one every day...some give a small
amount of veggies every day. You pretty much learn what your dog needs by
observation and go from there.
This is just what I think though...I've been BARFing a toy dog and
cats...not yet tried it with a Dane...so maybe some of the other BARFers
here should speak up too! :-)
