I don't think it's that easy. AFAIK, darktable only displays the histogram of 
the target image, but not the one of the RAW image. Even if you disable all 
modules, it still depends on the target color space.

Also, if the goal is to evaluate the performance of your camera, you don't need 
to know just "what's the maximal possible range", but "what's the maximal 
possible range with acceptable image quality". Otherwise, your sensor's depth 
of colors will likely be just 2^n, where n is the number of bits coding your 
RAW images.
