I understand that everyone can have its own workflow...

But to me the answer to your question is the RAW.

With the RAW you can always create an equivalent JPEG from the camera, it
has better highlight, it supports better processing without creating artifacts,
you can adjust the white balance, the color space is not hard-coded...

 You probably know all this...

I'm also doing that because it is far easier to remember which is what...

When I see a JPEG I can delete.

When I see a RAW, I backup as this is my original (like photographic films).
