You already have config settings for the width of the side panels and
dragging the window sides when not in full screen mode will adjust screen
size.

Then:  cp /usr/share/darktable/darktablerc ~/.config/darktable/darktablerc
and, depending on dt version, also copy darktable.gtkrc or darktable.css
Perhaps also keyboardrc.

When you restart dt, all settings will be default
