Is there any way that I can isolate a sender's domain and tell Declude that all mail from that domain IS spam or all mail from that domain is NOT spam? I think I've read discussion that has allusions to this ability but I'm not quite sure what the feature is called.
That's called a "Sender Blacklist". More information about how to set it up is in the manual at http://www.declude.com/JunkMail/manual.htm in the "Your own sender blacklists" section.

Are there any other interesting advanced features which I should be looking into and learning about to help enhance Declude's ability to recognize spam?
I'll let others answer that one, as some people have found some creative uses for the Declude JunkMail features.
