I understand your concerns, and I believe testing the current site is indeed rather worthless. About the questions:
Good points, maybe we can keep these questions up forever, to get an insight in the quality of the pages. But it doesn't ask how their experience was. Some might have been looking for this information for (p)ages.2) As soon as that's done, put up a survey to gather additional information. This is the survey I recommend:
* Why are you visiting our site today?
* Did you find what you were looking for?
To get to Nielsen's point. It's good to watch users and get to conclusions, and test the outcomes again on users, observe them, but don't ask them what they might like as an improvement... this would result in an conglomeration of 'nice ideas' with no global model behind it, which can be understood by users. It's important that users quickly understand the model used to design the site, the underpinning idea. That's why I am in favour of not only introducing a new designed homepage, but like to have a reorganisation of multiple pages (where possible), at least for the pages most visited/used.
