Yeah, that would be neat.  At the very least, it would
be nice on the transfer page to suppress the NS fields,
since anything you put in there is discarded anyway.

Wouldn't then be more flexible to add to transfer page (on web interface) an
option for nameservers, so if you do not type anything in, the old info
stays after the transfer as well. But, on the other side, if you do type
some other nameserver info that it makes these changes as well?

This way it can and doesn't have to be done, but we do not need to write
down every domain and then change the info in the manage interface...?
