My colleague built Data Gymnasia <https://mathigon.org/data-gymnasia> on the Mathigon <https://mathigon.org/> platform to bring our MS in Data Science students up to speed a bit, to have more of them at the same place by the time the semester started.
It's open-source and is intended to be an interactive textbook, which might be about the right scope. The content has been semi-vetted by the TAs in our program but not as collaboratively developed by people with the same type of training as the Carpentries instructor training, so I can't assert that it's as inclusive as Carpentries materials, but some of it might be what you're looking for and the platform but adding your own content is also a plausible path.
