Sorry, my off-list comment seems to
have misled.

A single pool made up of three mirrored vdevs is perfectly sensible.

The thing you want to be wary of is mixing different kinds of vdev in a single 
pool. Like mixing mirrors and RAIDZ vdevs in a single pool. But you are not 
thinking of that.

A pool of three mirrored vdevs sounds like a good approach to me.
