I'm not sure I've seen one explicitly called "Systems Administration" but a number of colleges offer Information Technology Management courses that tend to be more geared towards Sys-architects & sysadmins than standard comp-sci. The University of Hawaii here on Oahu offers one: http://www.catalog.hawaii.edu/courses/departments/itm.htm I haven't had a chance to investigate it, but a number of the students involved tend to end up helping administer the UH systems and network... which may explain why there have been several major security breaches in the last few years ;)
