Unless there is an existing OS job posting engine that is easy to drop
in and use, I think the list is the most flexible. If needed the list
could be moderated to avoid spam if there are volunteers for that.

IMO:
I tend to be rather old fashioned and do not spend a lot of time
looking for the latest changes in a wiki. I prefer mailing lists or
bloggs as a source of info.
I suspect that I'm not the only one.
I think that a dedicated mailing list would be simpler in the long
run. If someone is interested in providing or finding work, then they
can subscribe and filter the content themselves.
