Typically the requested donation for food or drink at the space is double the cost, rounded.
i.e. the average cost of canned drinks might be $0.56/can, but we round it up and request a dollar. If we assume that sort of pricing, and that everyone is honest and up to date, then you can estimate the profit as being roughly equal to costs.
