You're right, the question of some sort of video out on the SB has been raised lots of times, but I don't recall anyone who has actually done anything about it (I suspect it isn't easy).
As a simpler and more flexible solution to your problem (which I take to be - How do I control my SB when I can't see it?) have you considered using some sort of wireless remote such as a PSP, Nokia770 or wireless PDA? You can probably pick up one of the latter cheaply on eBay for a lot less than the conceivable cost of modding an SB. That's assuming you havea wireless network of course - if not, add the cost of a simple wireless access point.
