I found the squeezebox amazingly easy to setup. I also found slimserver
easy to install, but I'm also a pretty hardcore geek.

I was curious how simple setting this up would be for someone like my
mom, who uses her windows laptop daily, but has about 0 ability to deal
with anything unexpected on it. She uses itunes for her ipod, and was
able to get that up and running without much effort. She doesn't rip
her cds as far as I know, she just buys music from the apple music
store.

Installing slimserver on windows was trivial, and since itunes was
already there it found all her music. I really don't see what is
complicated about installing slimserver.

Shipping the squeezebox with CDs introduces a lot of overhead, and it's
generally a waste. Maybe they should have an option when you order to
get a cd that contains the most recent slimserver shipped along with it
for a small charge to cover costs for those who really care, but I can't
think of the last time I used the cd that shipped with a product. The
version of the software on the cd is always old, so you have to
download it from the website to get the latest anyway. I just end up
with a ton of cds that never get used.

As for bundling the ripper, there could potentially be various
licensing issues, as well as the overhead of having to test and
validate these third party applications before you ship them. If
choosing and setting up a ripper is too much trouble, you could always
take advantage of the slimdevices ripping services.
