It could very easily, but someone has to write a plugin that does the
work of doing a live rip and play at the same time.  There is no
technical limitation.

Personally I have thought that a integrating a ripping plugin that
spawns any number of different pre-configured ripper applications in
the background would help in making slimserver more consumer friendly.

Mostly, I just don't think many people would use it in this way.  I
setup the machine my slimserver runs on to poll the CD ever min and if
a CD is found in the drive do a rip/encode/tag/eject and then activate
the slimserver new music scan.  Within 15min or so a new CD is ready
for playback.
