I would almost guarantee that if you COPIED older CDs they would still be redbook, so LOSSLESS will still give you a great archive. Based on the fact that you're asking about AAC, I'll assume you're running on a Mac?
If you're ripping using iTunes to Apple Lossless (which is what I do) you can tag everything and keep a separate library just for your lossless files. When it's time to 're-encode' to AAC for your iPod or whatever, it's real simple to create a new library for your player and import the lossless files, encoding as AAC 128k. Anything higher than that, in my opinion, isn't worth it on an iPod.
