Good move on the switch to lossless - you using FLAC for that?
As far as knowing what the quality of burned CD's are; I don't think
there is a way to tell straight off the CD. The discs are just Red Book
standard (like your bought ones). Do you know if all of them were just
"Copied" from another CD - in which case it is likely that they were
copied like-for-like (ie, PCM data/RedBook) and would be good to go for
conversion to lossless. If they were burnt from files from your PC then
they may be of lower quality compressed tracks. Someone else might have
a clue how to tell?

For a compressed file format, I think there are many variables. Do you
want open source or proprietary? AAC locks you into Apples domain, MP3
is sudo non-proprietary, Ogg is the choice for Open Source I believe.
The higher the bitrate the better in compressed formats - though some
of the VBR files do a good job (try setting a minimum bitrate of 192k
if you like).
