Larry I use Max from http://sbooth.org. It's free and works well on my MBP under first 10.4 and now 10.5. To use it under 10.5, get the latest beta. It's under "unstable" but has been very stable for me.
I recommend ripping to FLAC for lossless, as its better supported cross-platform and is natively decoded in the Squeezebox. I use either Tag or iTunes to edit tags, as necessary.
