I have all of my Apple lossless files on an external 500GB drive
connected to my server (Mac MINI).  When I rip new material, I mount
that drive over the network to my G5 (exactly how you'd do it) and rip
using iTunes looking at that LIBRARY.  I have an iTunes plug-in called
MultiTunes which allows for multiple libraries. Ripping to lossless
iTunes looks at the Mac MINI drive.  When I want to re-encode to a
lossy format for my iPod I have created a library on the G5 that does
the syncing.  

I import tunes from the LOSSLESS library and re-encode them, basically
doing what you want, but this allows me to pick the tunes I want to
re-encode without having to keep two separate libararies of EVERYTHING,
whether I want it or not.

Again, I don't have any issues with Slim playing Apple's format.  I'm
all for the 'open-sourceness' of FLAC, but it wasn't built with the Mac
in mind, and MAX just doesn't handle tagging as easily as iTunes does.

Try them both...YMMV.
