I confess, I had no idea those options existed in TextEdit. However,
I wonder, can you create accessible tags in PDF files in this way?

I create pdf files with text edit all the time, and it's a whole 3
steps.
command-p, arrow down twice, interact with unknown, arrow down
again to preview, click, then once preview shows up, I hit command-
s and it prompts me for filename and format, including encrypted
pdf if I so choose. I usually don't, just standard pdf 99 perent
of the time, but you can also apply quartz filters, and al kinds of
things. Of course, most folks won't need that, so that's all you
need to do. I tried nisus writer. That's the one with the expired
demo that doesn't give you 30-days even though it says it does.
Kind of shoddy that. it is a nice editor, no doubt, but it's not
fancy enough for me to cough up 70 bucks for it.
