I guess the simple answer to that is because Text Edit is a text
editor and let's face it, the Preview option as described by Travis
is exactly that, its meant as an option whereby you can preview what
your printout will look like and its just a nice bonus to be able to
save into the PDF format from Preview. I doubt that most people who
use Text Edit would be interested in saving to PDF anyway though I am
but I have to admit that I probably wouldn't use the facility all
that much.

I am curious as to why Apple did not include p d f as one of the
formats in the regular save as choices in text edit.
It should not be hidden as it is.

Ok that's interesting Travis and Gordon but one thing that I think
I ought to comment on, I tried the example Travis gave and all
worked except for one step, you talk about hitting the preview
button, yep, preview activates with but command-s doesn't work on
my system, I find I have to use command-shift-s to "save as" but
that works as described meaning I get my .pdf document.

I confess, I had no idea those options existed in TextEdit.
However, I wonder, can you create accessible tags in PDF files in
this way?

I create pdf files with text edit all the time, and it's a whole 3
steps.
command-p, arrow down twice, interact with unknown, arrow down
again to preview, click, then once preview shows up, I hit command-
s and it prompts me for filename and format, including encrypted
pdf if I so choose. I usually don't, just standard pdf 99 perent
of the time, but you can also apply quartz filters, and al kinds
of things. Of course, most folks won't need that, so that's all
you need to do. I tried nisus writer. That's the one with the
expired demo that doesn't give you 30-days even though it says it
does. Kind of shoddy that. it is a nice editor, no doubt, but
it's not fancy enough for me to cough up 70 bucks for it.
