If you buy an imac, you won't get a server version of OSX. It does
not come with the computers by default. The server version of OSX is
$499 for a 10 user license, and $999 for unlimited user license. If
you're not an isp, or looking to host websites and the like, the
server is not necessary.
Now, with that said, there is nothing preventing you from installing
your own servers on your machine (apache, wuftp, postfix, ncftp,
etc...) You just won't get the integrated servers directly from apple.
Apple does include personal services such as personal file sharing,
and personal web pages. However, these services are not intended for
commercial use, and probably have restrictions on how many users can
connect, or (more likely) simply aren't optimized for server usage.
There's nothing stopping you from running them anyway if that's
really what you want to do.
