Hi Patrick
First, a bit of background on how the iPod works. the iPod icon on your
desktop does not show you all the folders. The iPod's folders are managed
internally by the iPod's operating system and iTunes.  
Generally speaking, a file dropped onto your iPod goes in the exact same
place in your iPod library as it exists in your iTunes library.  
So, if you've dropped an audio book, it will go in audio books, etc.
There are several ways to get files onto your iPod. If you have access even
temporarily to a copy of iTunes for windows I posted a trick that should
allow you full setup of your iPod, including synchronization with your
iTunes library. It's in the archives, I think it was about a week and a half
ago that I posted it, or I can send it to you again privately (it was a long
message). If you want to skype about this I can do that as well.
Alternatively, if you just want to get files onto your iPod you can do so
via automater. Create a workflow with the following two actions:
Get selected songs
send songs to iPod
You can then run that workflow. It's a bit quicker than dragging and
dropping, but I'd personally recommend the first trick, as doing that will
also allow you to update the iPod's firmware and the v1.1 update is well
worth having, as it makes the clicking sound come through the headphones at
a decent volume, which makes menu navigation easier.
