You are right VoiceOver doesn't work with those programs you have listed, however on the Mac your client should have a program called Text Eddit which is more or less the same as Microsoft Word and you can get word processors that don't come with the mac but they have to be paid for separately. As for the other programs, I'm not sure what your client can use but I'm sure there are programs out there that she will be able to use with VoiceOver.
