You are right, that ATM this does not work. And it did work in pré 2.4.0
versions.
Looking at the specs [1], I see no indication of this change.
Maybe someone of the developer-team (fl, mba?) can shed some light on this?
It is in the spec. See issue 78856.
It is item 1.4 in the spec (rather short, and easy to overlook though).

The option who wrote the specification has overlooked it, and the
persons who had read my post didn't see what I am trying to say.
There is no way to remove non-stylesheet language formatting. The
language selector at the bottom of the screen has no "remove language
formatting" option, nor there is an option "remove formatting including
language" in any the pull-down menus.
