There are a number of ways to restrict signing.  Have a look at the 
dkim-filter.conf(5) man page, especially these items, to see if there's 
something you can use:

        InternalHosts
        MacroList
        MTA
        PeerList

If the content scanner is on a different machine, PeerList might be 
especially useful.  I'm not familiar with the architecture of Postfix but 
others on this list are so perhaps they can be more specific.

If none of those are helpful, you're welcome to open a feature request to 
have such an option added.
