I would explore a tee fitting for the existing oil pressure sender so you could add an oil pressure switch (most of these close with four pounds of pressure) wired to a Hobbs meter. I would sign it off as a minor alteration, especially since it is a non-certified engine.
Might be fun to learn how the newer flight computers used in self launchers differentiate running and non running time for recordings flights.
