If you're still having trouble try checking that you have
'libreoffice-gtk installed (found in synaptic by typing 'libreoffice quick'.
I've checked my installation on 11.04, starts within 10secs and
'quickstart' is not enabled.
The checkbox on my installation is at :-
Tools/Options/Libreoffice/Memory box at bottom of list.
Hope this helps if not resolved.

According to the LibreOffice Help:
Enable systray Quickstarter
Mark this check box if you want LibreOffice to enable Quickstart. This option
is available if the Quickstart module has been installed.
