I can't help you with the problems that you have with 123Reg, other than to say that if it worked before their outage, then problems that have arisen now it has come up again aren't likely to be caused by your local configuration. The only scenario that I could see is if they have moved your mail to a different server.

Either way, if they sold the service to you, then it is up to them to sort it out, regardless of who actually provides the service/ I would certainly be looking for another provider.

We have Linux Mint 22 and Thunderbird on my laptop and our PC (2 connections I assume)

I have been with IONOS ever since they were called OneandOne (and well before; they registered my domain on 05-Apr-2003). I don't recall any outages during that time.

One word of caution, however. My contract with them is for a business type service, which is what OneandOne provided all those years ago. When OneandOne became IONOS, they wanted to switch me to a consumer type service, but I refused it after I discovered that they were unable to transfer my email accounts (I have quite a few mailboxes and over 300 aliases). The charges are pretty high, but the service suits me. You may find that one of their cheaper packages would suit you.
