XWiki looks good but it's TomCat
MediaWiki (wikipedia.com) might be the "vanilla" de facto wiki package
but is it PHP?

Since so many people know PHP, phpBB might be a good idea.  CAPTCHA's
might not be safe from spammers though.

*Details:*

There is a website that does wiki comparisons of a very large list. 
After a lot of queries, and downloading software, XWiki looked very
good, however it runs on TomCat.  I will add that it comes in a
standalone version.  I guess the "vanilla" flavor would be "MediaWiki" -
does anyone know if it's PHP?

I caught a number of articles recently indicating that the "big boy"
spammers have cracked most of the existing CAPTCHA methods out there,
including phpBB3, so on this not I personally have no preference, but it
seems we do have a lot of PHP knowledge on the thread - maybe we should
Nike it. :-P
