I pretty sure the out-the-box SWORD packager does not support this, as the
files are just described in a METS fileSec + structMap. However since the
packager architecture is designed to be modular, it should be reasonably
easy to write your own packager plugin to unpackage your package (in your
chosen format) and to make use of information you provide in that package,
such as bitstream descriptions.
One of my colleagues has done this to process data gathered directly from
laboratory equipment and deposit it into a DSpace data repository using
SWORD. I'll ask him how easy it was.
