I would suggest the 8100/80AV with the G3 upgrade. However, you might
consider the 8500 if you can later add a G3 upgrade to it.
I did add a G3 upgrade to my aging 6100 and, although it's not as speedy as
my B&W G3 at 400Mhz, it's quite fast. Nothing compared to what I was getting
before I add the upgrade, and way faster than my 2300c. However, there are
no video cards I can add to the 6100, and I guess it would be hard to add a
supported accelerated video card in the 8100. However, with the 8500, all
options are possible. I would say that after adding a G3 upgrade, the next
upgrade that makes significant gains is the addition of an accelerated video
card. You can drive your monitor at higher resolutions without loss of
speed. QuickTime movies can also benefits from the card, so that you can
play them at full screen, without dropping any frame.
So, my best recommendation would be the 8500 *with* the G3 upgrade! However,
if not possible, then the 8100 with the G3 upgrade would be my second
choice. Remember that with the 8500 and a G3 upgrade, you might be able to
run OS X on it, but you will never be able to do that on the 8100.
