I, too, am a huge fan of Tex-Edit Plus. With it, I make sure I have
CopyPaste, the multiple clipboard utility. 
I also am very fond of A-Dock, Wapp Pro, Default Folder, Graphic
Converter, and TT Converter (changes PC fonts to Mac format).
I hope others will contribute to the list. I like to know what I'm missing.
