My suggestions for this list:

ClarisWorks 2.1

  Incredible software. Runs on *any* Mac (even System 6). Uses 950KB
  of memory and provides very nice word processing with a really good 
  spell checker, drawing, painting, spreadsheet and database. All the 
  parts are completely integrated: you can mix drawings, text, paint,
  spreadsheets and database content at will. Remarkably fast and stable.
  (No longer available except maybe at auction, etc.)


BBEdit Light 4

  Free, excellent plain-text editor. Handles multiple find/replace,
  even across multiple files, with support for regular expressions.
  Supports drag-and-drop editing and automatic UNIX/DOS/Mac line
  endings. Runs on Sys 7.
  (I couldn't find version 4 on their website (www.barebones.com),
   but they have version 6.1 available which claims to need
   PPC/Sys7.5.5, which makes it pretty useless IMHO)


Niftytelnet-SSH

  My gateway to the world - an absolutely indispensable tool for
  anyone who has access to one or more UNIX servers. The best SSH
  client for Mac, hands down. Supports SCP, RSA and Kerberos, and 
  it's free.
